Stuffed Cucumbers

Shopping List

  • 1 Cucumber (or zucchini)
  • 1 container spreadable cheese (favorite flavor)

Instructions

  1. Take a cucumber and peel half inch ribbons of the skin off, creating a pattern.
  2. Cut ends off, then cut cucumber in half.
  3. Scoop out the seed portion of the cucumber creating a hollowed out cucumber.
  4. Wipe some of the moisture out of the center with a paper towel.
  5. Stuff with softened cheese.
  6. Put back in the refrigerator until cheese is firm.
  7. Slice 1/2 inch rounds and serve.
